Raw vegan apple blackberry pie? Yes, it’s possible! I’ve said it before and I’ll say it again, raw desserts really do take significantly less time in the kitchen than traditional baking. It may seem daunting at first to make a raw pie but once you’ve stepped out of your comfort zone and given it a try, you’ll be pleasantly pleased with the outcome. Use your food processor to make the crust – a combination of walnuts, dates, unsweetened shredded coconut and a touch of cinnamon and ground cloves to bring out the fall flavour. The crisp apple blackberry filling is light and simply scrumptious. This fall dessert is sure to delight!

Equipment needed: food processor, 9-inch pie pan, mandoline (optional), dehydrator (optional)

1. Crust
  1. 1 1/2 cups raw walnuts, recommended to be soaked for 4 hours
  2. 1 cup medjool dates, pitted
  3. 1 cup unsweetened shredded coconut
  4. 1/2 tsp cinnamon
  5. 1/2 vanilla bean or 1 tsp vanilla extract
  6. Pinch of ground cloves
2. Filling
  1. 2 apples (I used Royal Gala)
  2. 2 cups blackberries
  3. 2 tsp maple syrup
  4. 1/2 vanilla bean or 1 tsp vanilla extract
3. Top layer
  1. 1-2 apples thinly sliced (I used a mandoline)
  2. 1 cup walnuts, recommended to be soaked for 4 hours
  3. 2 medjool dates, pitted
Instructions
  1. To make the crust, first pulse the walnuts in your food processor until they are like breadcrumbs. Add remaining crust ingredients and process until it's fully combined and holds together. Spread the crust evenly in your pie pan and use your hands to press the crust up the sides of the pie pan so that it's all the way up to the rim.
  2. To make the pie filling, add all filling ingredients into your food processor and pulse until the apple and blackberries are finely chopped and blended together. Spread the filling evenly into your crust.
  3. To make the top layer, slice the apple thinly using a mandoline or your chef's knife. Layer the sliced apples on top of the filling. Add the walnuts and dates into your food processor and pulse until it forms crumbly pieces. Crumble the walnut-date mixture on top of the apple slices.
  4. Serve the pie cold or dehydrate at 105 degrees Fahrenheit for 2 - 4 hours (or longer if desired). Enjoy!

    In a large bowl, mix together the sugar, tapioca, and cinnamon. Add blackberries and apple slices. Toss gently to coat without mashing the berries. Let stand for 20 minutes.
