Although it still feels like summer, fall is upon us in Toronto which makes me extremely happy. I love the feel of crisp air, chunky sweaters, the colours of the leaves and most of all, the comforting smell and tastes of fall spices and seasonal meals. Bring on the butternut squash, sweet potato, pumpkin, cinnamon and pecan desserts! Move over pumpkin spice lattes, no-bake chai pecan bars are here to stay. Chai Pecan Bars
Equipment needed: food processor, 8 or 9-inch baking tray. Makes 6 - 9 bars

For the crust
  1. 1 cup raw pecans (recommended to be soaked for 6 hours)
  2. 1/2 cup unsweetened shredded coconut
  3. 1/2 cup raisins (although you can use dates if you prefer)
  4. Pinch of sea salt
For the chai pecan layer
  1. 1 cup raw pecans (recommended to be soaked for 6 hours)
  2. 1 cup raw almonds (recommended to be soaked overnight)
  3. 2 tbsp coconut oil
  4. 1/3 cup maple syrup
  5. 1/4 cup brewed chai tea
  6. Pinch of cinnamon
  7. Chopped pecans and cinnamon to garnish.
  1. To make the crust, process the pecans until they're like breadcrumbs. Add the shredded coconut, raisins, sea salt and process until its fully combined and holds together. Spread the crust evenly in the baking tray and then put it in the freezer while you get started on the filling.
  2. To make the chai pecan layer, first process the nuts. Add additional ingredients and process until it forms a smooth consistency. Depending on your preference for chai flavour and the consistency of the chai pecan layer, you may want to add 1-2 tbsp more of chai tea.
  3. Take the crust out of the freezer and spread the chai pecan layer on top. If you find it's difficult to spread, you can simply wet your hands with water and then it will be easier to pat down and evenly distribute the chai pecan layer. Garnish with chopped pecans and cinnamon.
  4. Freeze the dessert for at least 1 hour before serving and then slice into bars. You'll also want to store the remaining dessert in the freezer as it's best served cold. Enjoy!
