Raise your hand if you used to sneak raw cookie dough when you were a kid. Or maybe you still do. Treat your inner Cookie Monster woes with this recipe for raw chocolate chip cookie dough bites. They’re 100% raw, vegan, gluten-free and refined sugar-free. They’re the perfect treat for your backyard BBQ’s, your kid’s summer camp lunchbox or simply enjoying with others.  As Cookie Monster says, “Sometimes me think ‘What is friend?’ and then me say, ‘Friend is someone to share the last cookie with.”

Chocolate Chip Cookie Dough Bites

  1. 1 cup raw cashews, soaked half hour
  2. 1/2 cup gluten-free rolled oats (I use Bob's Red Mill)
  3. 1/2 tsp cinnamon
  4. 2 tbsp agave (you may want to add an additional tbsp depending on how sweet you want them)
  5. 1 tbsp vanilla extract
  6. 1/4 tsp sea salt
  7. 1/4 cup cacao nibs
  1. In a food processor, pulse the cashews, oats, and cinnamon for about 15 seconds. Add the agave and vanilla extract to the mixture. Combine the mixture until it's in a dough form.
  2. Remove the dough and place in a bowl. Mix in the cacao nibs so that they are evenly distributed throughout the dough.
  3. Divide the mixture evenly into 12 bite-size balls. Use your hands to roll each bite into a symmetrical sphere. Place the chocolate chip cookie dough bites onto a parchment-lined plate. You can enjoy them right away or chill them in the freezer. Be sure to save some for yourself because they go fast!
