Easy Tofu Feta "Cheese" (aka Better Feta)

The trick to eating healthy meals is to prepare as much as you can in advance. For instance, this marinated Easy Tofu Feta “Cheese” (aka Better Feta) makes a great addition to your salads, grain bowls and other main dishes, and can easily be made ahead of time in about 10 minutes total. A friend of mine typically adds herbs and other ingredients to her feta to give it a superior pop of delicious flavour, hence the name Better Feta. In this recipe, you’ll marinate the tofu cubes in rice vinegar, lemon juice, nutritional yeast, olive oil, dried oregano, garlic powder and pink Himalayan salt. I usually let the tofu marinate in the refrigerator for 3 hours or overnight but if you’re in a pinch for time, 30 minutes should suffice. One important note! Personally, I believe it’s best to always buy organic tofu.  The reason for this is that soybeans are one of the most genetically modified crops grown in North America. All organic soy is required to be non-GMO. My biggest issue with GMO products is that there is not enough research completed confirming what the long-term health effects of consuming GMO products are. It’s not a gamble I’m risking to take.   1. 1 pack of extra firm organic tofu
  2. 1/2 cup rice vinegar
  3. 1 lemon, juiced
  4. 2 tbsp water + more if needed
  5. 2 tbsp nutritional yeast
  6. 1 tbsp extra virgin olive oil
  7. 1 tsp dried oregano
  8. 1 tsp garlic powder
  9. 1 tsp pink himalayan salt
  1. Remove tofu from packaging and drain the water. Pat the tofu dry with paper towel while gently squeezing out any liquid from the tofu. Slice tofu into small 1/2-inch cubes. Add to a mason jar and set aside.
  2. In a small bowl, prepare the marinade by whisking the remaining ingredients together.
  3. Add the marinade to the mason jar, place the lid on and mix well.
  4. Refrigerate for 3 hours or overnight. Enjoy!
