Suddenly it feels like summer is finally on its way! From backyard BBQs, picnics in the park to sitting on the dock of the bay, who wants to spend hours slaving away in the kitchen? One of the best things about incorporating more raw foods into your diet is that it doesn’t require as much of a time commitment as traditional cooking and baking. I love making raw desserts because it’s as simple as combining all of the ingredients in your food processor to make a delicious treat. You don’t have to wait around for the dessert in your oven and it’s not like a science experiment with baking where each ingredient needs to be precisely measured otherwise the recipe is a complete disaster. You can easily be an expert at making raw desserts. No training required.

When making this recipe, be sure to purchase cacao powder rather than cocoa powder. I typically buy Navitas Naturals Organic Cacao Powder. It’s best to use cacao over cocoa because cacao has been cold-pressed from cocoa beans and has living enzymes, as opposed to cocoa which has been roasted at high temperatures. Enzymes are protein molecules that assist in all chemical reactions within the body to supply energy and nutrients; without enzymes life seizes to exist. Although the body produces its own enzymes, it’s easier to digest foods that have living enzymes and they also place less of a burden on your body’s organs. Cacao is considered a “superfood,” meaning it’s extremely dense in nutritional quality. It’s filled with antioxidants, iron, calcium, magnesium, vitamin E and B vitamins. Naturally sweet, ooey and gooey, these raw vegan brownies are guaranteed to go fast!

Brownie base
  1. 1 cup raw walnuts
  2. 1 cup Medjool dates, pitted
  3. 2 tsp natural sweetener
  4. 1/2 cup cacao powder
  5. 1 tbsp almond butter
  6. 1 tsp pure vanilla extract
  7. Pinch of sea salt
Chocolate icing
  1. 1/3 cup coconut oil
  2. 1/3 cup cacao powder
  3. 1 tbsp natural sweetener (raw honey, coconut nectar, maple syrup)
  4. Pinch of sea salt
Instructions
  1. To make the brownies, first process the walnuts in your food processor into crumbs. Add remaining brownie ingredients and process until completely combined. Line your pan or dish with parchment paper and press the brownie down so that it’s smooth.
  2. To make the chocolate icing, blend all ingredients in your food processor or high-speed blender until smooth.
  3. Top the brownies with icing.
  4. Chill in the freezer for about 30 minutes or until the icing is firm. Enjoy!
