Peppermint Pudding with Cacao Crumble

I told you that I was incorporating fresh mint more often in the kitchen. And so, here we are. This Peppermint Pudding with Cacao Crumble is a product of my love for mint, avocado and chocolate. Avocado is loaded with healthy fats and gives the dessert its deliciously creamy texture. The combination of peppermint flavour extract and mint leaves creates a dessert with a fresh pop of flavour that awakens the senses. I use Simply Organic’s Peppermint extract, which is made with premium quality, organic ingredients for fresh minty flavour. Beyond its unique flavour, there are many reasons why mint is one of my go-to ingredients. Some of the health benefits of mint include promoting digestion, reducing nausea and congestion, and providing relief from fatigue and depression. While the pudding can be enjoyed on its own, it’s a more complete and satisfying dessert when served with the Cacao Crumble. The Crumble is made from a combination of Brazil nuts, raw cacao, virgin coconut oil, medjool dates, coconut nectar and a pinch of pink salt. Of course, you can substitute Brazil nuts for your nut of choice, such as almonds or walnuts. I do like the texture that the Brazil nuts provide though and these powerhouse nuts are rich in the antioxidant selenium,  which plays a key role in the body’s detoxification system and provides protection against oxidative stress. Peppermint Pudding with Cacao Crumble
Serves 3
A deliciously creamy and rich pudding that's packed with healthy fats. You will need a food processor to make this recipe.

Peppermint Pudding
  1. 1 avocado
  2. 1/4 cup + 1 tbsp coconut nectar or maple syrup
  3. 1/4 cup fresh mint leaves, chopped + additional mint leaves to garnish
  4. 1 tsp peppermint flavour extract
  5. 1/2 tsp pure vanilla extract
Cacao Crumble
  1. 1/2 cup raw Brazil nuts (or other nuts like almonds or walnuts)
  2. 2 tbsp raw cacao powder
  3. 1 tbsp virgin coconut oil
  4. 1 tbsp coconut nectar or maple syrup
  5. 3 - 4 medjool dates
  6. Pinch of pink himalayan salt
To make the Peppermint Pudding
  1. Prep the ingredients and be sure to finely chop the mint.
  2. In a food processor, process all ingredients until smooth. Set aside in bowl.
To make the Cacao Crumble
  1. In a food processor, first pulse the Brazil nuts into a fine crumble.
  2. Add additional ingredients and pulse until the mixture is completely combined and crumbly.
To assemble the Peppermint Pudding with Cacao Crumble
  1. Layer the Cacao Crumble in small bowls or ramekins. Add the Peppermint Pudding on top and garnish with fresh mint leaves. Enjoy!
Notes
  1. If you have leftover crumble, roll the crumble into dessert bites. It makes a great snack on its own.
