As I walked into the takeout bar, I didn’t know what to expect but I was graciously welcomed by Owner/Chef Ren Mercer (ex-Spoke Club), who has over 20 years of experience working in high-end restaurants, and his partner, Ruth Magbanua. There’s a small sign listing VEGHED’s few meal options, including soup, a 20-ingredient salad and grilled cheese. Ruth suggested I try the 20-ingredient salad which was a Muay Thai Noodle Salad for $7. This was a beautiful mix of spiralized beets, carrots and zucchini with kale, spinach, broccoli, red cabbage, edamame, bean sprouts, tofu, chopped mint and noodles. Oh and I can’t forget the chili. Ren asked if I’d like chili on top. Although hesitant, I obliged as I was feeling on the adventurous side. Ren proceeded to tell me a story of his time living in Thailand, where chili was generously added to breakfast, lunch and dinner. The chili sure gave the dish a kick but it’s just what I needed to keep me powering through the day and give me the sense of traveling to Thailand, without the 20+ hour plane ride.
If there are two words I could use to best describe VEGHED (because one just isn’t enough), it’s creative and dedicated. VEGHED uniquely combines top notch ingredients every day to give your taste buds an explosion of delicious flavour. It’s a place of good intentions where you can feel good about the food you’re eating and where it’s coming from.
