Meatless Monday coming in cool thanks to zucchini noodles with fig, hemp and pumpkin seeds! It’s still as warm as ever in Toronto so it’s nice to not have to use your oven to make dinner. Zucchini and figs may sound like an interesting choice but I find that zucchini pairs well with sweet flavours if it’s balanced with a sauce that’s made rich with avocado, garlic, paprika and apple cider vinegar. Packed with fibre, figs are among the most highly alkaline foods, making them useful in supporting the proper pH of the body. You’ll also be getting a healthy dose of good fats in this meal, including omega-3 essential fatty acids, with a tablespoon of hemp oil and avocado in the dressing, as well as a sprinkle of hemp seeds and pumpkin seeds on the dish itself.
After the lazier, calm days of summer, September may feel a bit crazy at times. Personally, I find our body always finds ways to tell us to slow down, and sometimes, in strange ways. The past few days have been action-packed and required being on my feet all day. I woke this morning feeling tired and drained but overwhelmed by my to-do list, I’ve been powering through. While using my mandoline to slice a radish, I had a painful accident. I’ll refrain from exposing the complete details in an attempt to not ruin your next meal. Needless to say, the accident has set me back and at first I was frustrated and blamed myself for what happened but reflecting on the incident, I know it happened for a reason. The reason being to slow down, stop taking everything so seriously and listen to the initial signs of your body telling you to slow down. I hope you’ll take this as a message to not be so hard on yourself. Take some time tonight for you.
