Pumpkin Seed Butter Brownie Bites

Looking for nut free energy bites that are absolutely delicious? Make these Pumpkin Seed Butter Brownie Bites for a nutritious snack or dessert option that won’t disappoint! While you can substitute any other “butters” (eg. almond butter, peanut butter, sunflower seed butter) in this recipe, pumpkin seed butter gives these bites a unique, earthy taste. PLUS pumpkin seeds are an excellent source of magnesium, zinc, iron and protein. You’ll add antioxidant-rich raw cacao to the recipe, along with fiber-rich medjool dates, raw pumpkin seeds and a pinch of pink Himalayan salt. Process all the ingredients together and then roll the dough into bite size balls. Want to take the recipe up a notch? Sprinkle our Chocolate Superfood Coconut Chips on top of all the bites OR add 1/2 cup Chocolate Coconut Chips to the food processor when processing the bites. Refrigerate for about 15 minutes and then enjoy these decadent treats. Easy peasy, right?

Ingredients
  1. 1 1/2 cups raw pumpkin seeds
  2. 1/3 cup raw cacao powder
  3. 10 medjool dates, pitted
  4. 2 heaping tbsp pumpkin seed butter
  5. Pinch of pink Himalayan salt
  6. Optional ingredient: Rawcology Chocolate Superfood Coconut Chips
Instructions
  1. In a food processor, process all ingredients until smooth and the dough comes together in a large ball.
  2. Using your hands, roll the dough into bite size balls. Sprinkle with Rawcology Chocolate Superfood Coconut Chips.
  3. Place in the refrigerator for 15 - 30 minutes and then enjoy!
Notes
  1. Brownie bites can be stored in the freezer for up to 1 month.
