Now come on, what would summer be without ice cream? If you don’t have at least one day before September that begins, ends or includes ice cream in it at some point, then we’re sorry to say that you’re doing it wrong.

Better yet, make your own ice cream so that you can enjoy it any time of day. Made with only coconut milk and sweetened naturally with maple syrup, this ice cream is even healthy enough for breakfast, if you’re having one of those days. Hint, hint, it even has greens! Spirulina is an algae and considered the most nutrient dense food on the planet due to its high concentration of protein, vitamins and minerals. Don’t be scared though if you’re not used to seaweed in your ice cream, you can’t taste it at all and it gives the ice cream a beautiful blue-green hue. 

Jazz it up a bit and make homemade ice cream sandwiches, sundaes and banana splits using our Matcha Latte or Chocolate Super food Coconut Chips as a topping.

Dairy Free Spirulina Chip Ice Cream

A dairy free and delicious ice cream made with coconut milk, spirulina and our Matcha Latte Coconut Chips.

Ingredients
  1. 2 cans full fat coconut milk
  2. ¼ cup maple syrup
  3. ½ tsp vanilla bean powder or 1 tsp vanilla extract
  4. 1 tsp spirulina
  5. 3 tbsp cacao nibs
  6. 1 cup Matcha Latte Superfood Coconut Chips
Instructions
  1. Combine coconut milk, maple syrup, vanilla and spirulina in a high speed blender and blend until thoroughly combined.
  2. Transfer ice cream base into a freezer-safe container and stir in cacao nibs and coconut chips.
  3. Freeze for a minimum of 6 hours, stirring the mixture every hour.
  4. Before serving, let defrost for approx. 10 minutes or more so it reaches the perfect consistency for scooping.
