Banana Snickers Overnight Oats

Peanut Butter, Banana, and Chocolate will forever be the elite combo. You’ll love this snicker inspired overnights oats topped with a gooey date caramel. Bursting with fibre making this easy recipe great for heart health, digestive heath, and blood sugar control.

Getting your daily dose of fiber is important. The key to good digestion is getting adequate amounts of soluble and insoluble fiber. A high fiber diet helps to keep you regular, balance blood glucose levels, reduce the risk of heart disease, and lowers your risk of chronic diseases.

Ingredients
Date Caramel
  • 6 medjool dates soaked for 20 minutes
  • 1/2 cup reserved date water
  • 1/4 cup nondairy milk
  • 1/4 cup peanut butter
  • 1/2 tsp vanilla
  • 1/4 tsp sea salt
Removed the pit from the dates and add to a high speed blender. Add peanut butter, milk and half the date water.  Blend on high and add vanilla and sea salt.  If the date caramel is too thick add the remaining date water.  Pour into a jar and sea tightly with a lid.
    
Overnight Oats (1 Serving)
  • 1/2 cup oats
  • 3/4 cup nondairy milk
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 2 tbsp chia seeds
  • 1 tbsp hemp seeds
  • Pinch sea salt
  • 2-4 tbsp date caramel
  • 2-3 tbsp roasted unsalted peanuts
  • 2-3 tbsp Rawcology Chocolate Oat Cluster
  • 1/2 banana sliced
  • Melted chocolate (optional)
Method
  1. Place all the ingredients into large glass measuring up and stir to combine. 
  2. Transfer to a mason jar and place into the fridge overnight.  
  3. When ready to serve, slice banana into coins and place them into the mason jar. 
  4. Top the oats with date caramel, Oat Clusters, melted chocolate and peanuts.
  5. Enjoy for breakfast or a healthy dessert.
