Peach Ice Cream and Pancakes

Peach season will be here before you know it. We’re kicking off the season early with these fluffy, gluten-free, plant-based pancakes with juicy peaches in each bite. Served with a creamy dairy-free peach ice cream, making it the perfect recipe for a peach lover's dream.

Peaches are a sweet stone fruit that holds many nutritious benefits. Rich in antioxidants and anti-inflammatory compounds, high dietary fiber which helps to regulate digestion, and boosting with all the vitamins and minerals for glowing skin.

Ingredients
Ice cream 
  • 4 cups frozen peaches 
  • 1/2 tsp vanilla 
  • 1 cup coconut milk 
  • 2 tbsp maple syrup
  • 2 tbsp peach granola 
Pancakes
  • 1 cup soy milk
  • 1 tsp lemon juice
  • 1 tbsp protein powder 
  • 1 tbsp ground flax
  • 1 tbsp coconut sugar 
  • 1/2 tsp vanilla 
  • 1 1/2 cup gf flour blend
  • 1 tbsp baking powder 
  • Pinch salt 
  • I cup peach slices 
  • 1/4 cup Rawcology Peach Granola
Method
Peaches
  1. Place frozen peaches, vanilla, coconut milk, maple syrup into a food processor and blend until smooth and creamy.  
  2. Scrape down sides as needed and be patient!  Scrape into a container fitted with a lid.  
  3. Sprinkle Rawcology Peach Grain Free Granola on top and place in the freezer until firm.  Once ready to eat, remove from the freezer for 20-30 minutes to soften to make it easier to scoop.
Pancakes
  1. Place milk, lemon juice, flax, protein powder and vanilla in a large glass measuring cup and whisk well to combine.
  2. In a separate bowl whisk dry ingredients.  Add wet to dry to form a batter.  Heat a skillet and make pancakes.
  3. Serve with homemade peach nice cream, fresh peach slices and Rawcology Peach Grain Free Granola.
