Raw Creamy Tahini Basil Zucchini Noodles

When it’s this hot, it’s time to bring out the spiralizer and make zucchini noodles! This recipe can be made in 20 minutes or less. The dressing for the spiralized zucchini features some of my all-time favourite ingredients: avocado, tahini, basil and garlic. If you’re new to tahini, it’s a paste made from ground sesame seeds. Make sure you purchase raw tahini for the recipe otherwise you won’t obtain as many nutrients with the hulled, processed version. Tahini adds depth to the dressing and provides a rich source of minerals, including magnesium, potassium and iron, as well as protein. The tahini mixes well with avocado, which gives the recipe it’s rich, creamy taste like a pasta loaded with cheese minus the gut pain. You’ve heard before that avocado is loaded with healthy fats but did you know that it’s also an excellent source of vitamin B5 (pantothenic acid)? Why should you care about vitamin B5? It’s known as the “anti-stress” vitamin and supports stress levels in the body and the adrenal glands. Maybe that’s why I always feel blissful when eating my fair share of avocados. Add in basil, garlic, lemon juice and nutritional yeast to create a delicious, nutrient-packed sauce for your zucchini noodles. You’re going to love it!

  1. 2 large zucchini, spiralized
Creamy Tahini Basil Sauce
  1. 3 tbsp raw tahini
  2. 1 avocado, peeled and pitted
  3. 1 cup fresh basil
  4. Juice and zest from 1 lemon
  5. 4 tbsp water
  6. 3 tbsp nutritional yeast
  7. 2 garlic cloves
  8. 1/2 tsp paprika
  9. 1/4 tsp pink himalayan salt (or more to taste)
  10. Pinch black pepper
For the zucchini noodles
  1. Cut the ends of the zucchini and spiralize each zucchini. Place zucchini noodles in a large bowl.
For the creamy tahini basil sauce
  1. In a food processor, process all ingredients until smooth (approximately 1 - 2 minutes). Scrape down the sides of the food processor and process the ingredients until completely smooth.
For the creamy tahini basil zucchini noodles
  1. Toss the zucchini noodles with the sauce. Season with additional nutritional yeast, basil and black pepper. Enjoy!
