Spicy Lentil Avocado Boats

It’s all about making easy recipes in the summer so that you can maximize your time spent outdoors. I love avocados because they’ve got the good type of fats that will fuel you and keep you full for longer periods of time in addition to being absolutely delicious. I like turning my avocados into little boats and filling them with veggies and legumes to make a complete nutritious appetizer or meal. In these spicy lentil avocado boats, I season the lentils with ground cumin, onion powder, garlic, pink himalayan salt and red pepper flakes. The cumin spiced lentils create a distinct flavour profile. Cumin is an herb that’s often found in taco seasonings, Mexican, Spanish, Middle Eastern and Indian cooking. Cumin is the seed of a small plant in the parsley family and is high in iron, supports good digestion and has anti-carcinogenic properties.  Topping the avocado boats off with shredded red cabbage, cilantro and a spritz of lime juice gives the recipe an excellent crunch and pop of flavour! Spicy Lentil Avocado Boats

Ingredients
  1. 4 ripe avocados, halved, pitted
  2. 1 1/2 cups lentils
  3. 2 garlic cloves, minced
  4. 1 tbsp ground cumin
  5. 1/2 tbsp onion powder
  6. 1/2 tbsp red pepper flakes
  7. 1/4 tsp pink himalayan salt
  8. 1/4 cup cilantro, chopped
  9. 1/2 cup red cabbage, shredded
  10. 2 - 4 limes
Instructions
  1. Slice avocados in half and remove pits. You can keep the avocado skins on or pop the avocado out using a spoon.
  2. In a large bowl, season lentils with ground cumin, onion powder, red pepper flakes, minced garlic and pink himalayan salt. Mix well.
  3. Using a mandoline, shred red cabbage or use a chef's knife to finely chop red cabbage. Chop cilantro.
  4. Top avocados with spicy lentil mix, red cabbage, cilantro and lime juice. Enjoy!
Notes
  1. If you prefer less spice, omit or reduce the amount of red pepper flakes included.
