4 Make-Ahead Snacks That Will Save Your Summer

Here's the thing: I'm not just speaking as someone who runs a snack brand. I'm speaking as a mom, a sister-in-law, and one third of the family team behind Rawcology — three moms with kids ranging from two to seventeen between us, which means we have collectively survived more hungry-kid emergencies than we can count. The Sunday Prep Plan (45 Minutes, Done)

Start: Chia jars — five minutes to assemble, then into the fridge. Then: Energy ball dough — mix and refrigerate while you make the muffins. Muffins: Blend, pour, into the oven. Twenty minutes hands-off. While muffins bake: Roll the energy balls — dough is chilled and ready. Then: Date bites — four minutes. Literally.

Recipe 1 — Date & Seed Butter Bites
Three ingredients. Zero cooking. Four minutes. The one that looks like it came from a catering board.

Ingredients (makes 20 bites)
• 20 Medjool dates, pitted
• ½ cup sunflower seed butter

Instructions
1. Slice each date lengthwise to open like a canoe — don’t cut all the way through.
2. Remove the pit. Press open gently so it holds its shape.
3. Fill each date with approximately 1 tsp of sunflower seed butter.

Recipe 2 — Blender Power Muffins with ACV
One blender. No bowl. Twelve muffins. The muffin that goes to the gym while you sleep.
Everything goes in the blender. You pour it into a muffin tin. Twenty minutes later you have twelve muffins. Freeze the batch and pull one out every morning for three months. The secret ingredient is apple cider vinegar, which makes everyone raise an eyebrow, then never taste it.
Ingredients (makes 12 muffins)
• 2 cups gluten-free rolled oats
• 2 very ripe bananas (brown-spotted — the riper the better)
• 2 eggs
• 2 tbsp apple cider vinegar, raw with the mother
• ¼ cup maple syrup
• ¼ cup choice of nut or seed butter
• ½ cup unsweetened applesauce
• 1 scoop chocolate protein powder
• 1 tsp baking soda
• 1 tsp cinnamon
• ½ tsp vanilla extract
• Pinch of pink Himalayan salt
• ¼ cup hemp hearts
• ¼ cup pumpkin seeds
• Optional mix-ins: blueberries, dark chocolate chips, dried mango

8. Preheat oven to 350°F. Line a 12-cup muffin tin with parchment liners.
9. Add oats to blender. Blend 20–30 seconds until a rough flour forms.
10. Add bananas, ACV, maple syrup, sunflower seed butter, applesauce, baking soda, cinnamon, vanilla, and salt. Blend smooth, about 30–40 seconds.
11. Pour into a bowl. Stir in hemp hearts, pumpkin seeds, and mix-ins by hand, do not blend these.
12. Divide into muffin tin, about ¾ full per cup. Top with Rawcology clusters if using.
13. Bake 18–22 minutes until a toothpick comes out clean.

Ingredients (makes 5 jars)
• Overnight oat chia pudding base: 2½ cups full-fat coconut milk (or oat milk), ½ cup chia seeds, ½ cup gluten free oats, 2 tbsp maple syrup or raw honey, 1 tsp vanilla extract, pinch of pink Himalayan salt

15. Whisk together coconut milk, chia seeds, maple syrup, vanilla, and salt. Stir well — no clumping.
16. Let sit 10 minutes, then stir again to break up any clumps.

21. Combine oats, cacao powder, flaxseed, and salt in a large bowl. Mix well.
22. Add sunflower seed butter, honey or maple syrup, and vanilla. Stir until a sticky dough forms. Add water 1 tbsp at a time if too dry.
23. Refrigerate dough 20 minutes, chilling makes rolling much easier.
24. Roll into 1-inch balls. Optionally roll in cacao, crushed clusters, or shredded coconut.
