Beet Waffles

 

Weekends are made for waffles.

They are soft, fluffy, and of course pink. Boosted with heart healthy beets and topped with antioxidant filled cherries.🍒 

Cherry season is in full swing, and of course all the benefits they bring. Cherries are a nutritional powerhouse filled with fiber, vitamin C, zinc, and potassium. These sweet little gems are great for removing toxins from the liver, enhancing skin health, and contain a high level of phytochemical which help to regulate our sleep cycle and enhance our mood.

Ingredients 
  • 3/4 cup non dairy milk
  • 1 tsp apple cider vinegar 
  • 2 tbsp oil of choice
  • 1 tsp vanilla extract
  • 2 tbsp beet crystals
  • 1 cup gf flour blend
  • 3/4 cup almond flour
  • ½ cup tapioca starch
  • 1 tsp baking powder
  • 1/2 tsp salt
Garnish
  • Cherries 
  • Vegan whip cream
  • Rawcology Apple Cinnamon Oat Clusters
Method
  1. Preheat waffle maker. Whisk milk, apple cider vinegar, oil, beet crystals and vanilla together. Set aside. 
  2. In a separate bowl whisk dry ingredients together. Add wet to dry and stir until well incorporated. 
  3. Grease waffle maker with nonstick spray. Ladle batter into maker without over filling. Cook for 3-4 minutes. Continue until batter is done. 
  4. Top with Rawcology Apple Cinnamon Oat Clusters, cherries and whipped cream.
