Carrot Cake Overnight Oats
Cue carrot cake recipes, it’s almost Spring!!! These carrot cake overnight oats will not only give you a full serving of veggies at breakfast but will provide satiety all day long. It’s like having dessert for breakfast with all the delicious warming spices of carrot cake.
Ingredients
- 1 cup oats
- 3 tbsp chia seeds
- 3 tbsp hemp seeds
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 2 tbsp raisins
- 1/4 tsp salt
- 1 1/2 cup milk of choice
- 1/2 cup yogurt
- 1/2 tsp vanilla
- 1 tbsp maple syrup
- 1/2 cup grated carrot
Toppings
- Whipped cream or yogurt
- Toasted pecans
- Rawcology Banana Granola
Method

To a bowl add oats, chia seeds, hemp seeds and spices. Stir to combine.

Add in liquids and grated carrots. Mix thoroughly.

Place in the fridge covered overnight and when you are ready to eat, stir mixture and split into 2-4 bowls.

Top with yogurt or coconut whip, pecans and tons of Rawcology Banana Granola. ENJOY!
