Ingredients:

Chia Pudding

1½ cups organic coconut milk

½ cup chia seeds

1 tsp vanilla extract

1 tbsp maple syrup

2 tbsp Blume Reishi Hot Cacao powder

Pinch of sea salt


Layers & Toppings

Dairy-free milk chocolate, melted (for the base)

Vegan marshmallows (we used Dandies)

Rawcology Chocolate Grain-Free Granola

Coconut whipped cream


Instructions

  1. Make the chia pudding
    In a bowl or jar, whisk together coconut milk, chia seeds, vanilla, maple syrup, hot cacao powder, and sea salt until well combined.

  2. Let it thicken
    Cover and refrigerate for at least 2–4 hours, or overnight, until thick and pudding-like. Stir once halfway through if you can to prevent clumping.

  3. Prepare the chocolate base
    Melt the dairy-free milk chocolate and spoon a thin layer into the bottom of your serving glasses or jars. Let it set slightly.

  4. Assemble the layers
    Add chia pudding until the jar is about halfway full. Sprinkle in a layer of vegan marshmallows, then top with the remaining chia pudding.

  5. Finish it off
    Top generously with Rawcology Grain-Free Granola and a dollop of coconut whipped cream.
