Plant Based Twix Bars

Tahini is high in fiber, nutrients and a good source of protein making these bars a snack you will enjoy, because they are insanely delicious, and feel good about eating because they are only filled with healthy, natural ingredients. The whole family will love these snacks and they double as an impressive nostalgic dessert if entertaining. 

We love the crunch our Chocolate Grain Free Granola adds to the top, with more fiber and gut loving ingredients. This recipe is gluten free, low sugar, plant based and if you wanted to make it nut free, sub the almond flour for chickpea flour in the crust. 

Only eight ingredients and 4 simple steps, these bars are great for meal prep, sweet indulgence in the afternoon,  and can be made ahead, kept in the freezer and enjoyed all week. 

 Ingredients 

Crust

  • 1 1/2 cups almond flour
  • 2 tbsp maple syrup, room temperature 
  • 1/4 cup coconut oil melted and cooled 
  • Pinch salt

 

Filling

  • 2/3 cup tahini 
  • 1/3 cup maple syrup 
  • 1/4 cup coconut oil 
  • 1 tsp vanilla
  • 1/4 tsp sea salt (more to taste)

Method

  1. Preheat the oven to 350F and place parchment into an 8x8 pan.  To a medium sized bowl add almond flour, maple syrup, coconut oil and salt.  Mix to combine.  Press firmly into the prepared pan.  Bake for 15 minutes.  Set aside to cool.
  2. For filling add all the ingredients into a small pot.  Stir to combine.  Bring to a bubble and then reduce heat to a simmer for 10 minutes. Remove from heat and allow the mixture to cool slightly before pouring over the crust.  Place in the freezer to set for 30 minutes to an hour. Before adding the chocolate layer.
  3. Melt chocolate and coconut oil together in the microwave in 30 second increments until smooth.  Pour over caramel in an even layer.  Sprinkle  granola on top of chocolate and sprinkle with melon sea salt. Place back in  the freezer to set.   
  4. Once ready to eat, remove from the freezer for 15 minutes.  Use a hot knife to cut into bars, wiping the knife between each cut.  Store in the freezer.
