Santa's Christmas Cookie Recipe
The most delicious holiday cookies that Santa can’t even resist.🎅🏻
These chocolaty peppermint oatmeal cookies take on the classic oatmeal cookie with a minty chocolate twist.
Ingredients
- 1 ½ cup GF rolled oats
- 1 cup GF oat flour
- 1/4 cup cacao powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup crushed Rawcology Mint Chocolate Granola
- 1/2 cup dark chocolate chips
- 2 flax eggs (2 tbsp ground flax + 6 tbsp water)
- 1/3 cup coconut oil
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
Method

Start by mixing the ground flax powder with water to make the flax egg. Let sit for 10 mins

Line baking tray with parchment paper and set oven to 375.

Mix all dry ingredients into a big bowl, GF rolled oats, oat flour, cacao powder, baking powder, baking soda, salt.

Add in Rawcology Mint Chocolate Grain Free Granola

Mix all wet ingredients in a smaller bowl and add flax egg: Coconut oil, coconut sugar, maple syrup, flax egg.

Add wet ingredients to dry and give a good mix and place the bowl into the freezer to chill for 5 mins

Roll into balls, top with crushed candy cane, and place onto baking tray and straight into the oven, Bake for 10-12 minutes.
