Vegan Mascarpone Berry Toast 

Mascarpone toast with a sprinkle of antioxidant boosting berries and gut-loving kefir. It's the perfect way to start your day!

Think of Coconut Kefir as a probiotic powerhouse. Probiotics can help stimulate the growth of good bacteria while also protecting against “bad” bacteria. Coconut kefir is rich in probiotics that boost good gut bacteria, increase immunity, energy, and glowing skin. 

   

Ingredients 
  • 1 1/2 cups raw cashews soaked overnight 
  • 2 tbsp lemon juice
  • 1/2 tsp apple cider vinegar
  • 1/2 cup coconut kefir (or thick yogurt)
  • 1/4 tsp salt 
Method
  1. Drain and rinse cashews.  Place in a high-speed blunderer food processor.  Add remaining ingredients and blend until smooth and creamy.  Scrape down sides as needed.
  2. Place in a bowl and cover with a lid. Let the mascarpone sit overnight to thicken.
  3. When ready, add to your favourite toast (we recommend sourdough), top with a variety of berries and a crumble of Rawcology's Berry Burst Granola Snack Bites.
