4 Back to School Snacks That Will Save Your Week
(And Make You the Coolest Parent at School Pickup)
By Megan Loach Tomulka, Co-Founder, Rawcology • As seen on CHCH Morning Live • Fall 2026

September is here. The backpacks are out, the alarm clocks are back on, and the question that haunts every parent , what do I actually put in this lunchbox?, is officially back for another season.
I’m Megan Loach Tomulka, co-founder of Rawcology, a mom of two, and one third of the family team that built a certified organic, allergen-free snack brand because we couldn’t find one that actually worked for real family life. Between myself and my co-founders Tara and Laura, we have six kids ranging from two to seventeen, which means we have tested every snack, every lunchbox format, and every ‘will they actually eat this’ scenario that exists.
These four recipes are the back-to-school answers. They’re fast, they’re genuinely nutritious, every single one has a superfood hiding inside it, and, most importantly, your kids will ask for them. Not tolerate them. Ask for them.
We made them live on CHCH Morning recently and the response was overwhelming, so here’s everything: full recipes, the nutrition story behind every ingredient, make-ahead tips, and lunchbox hacks for the whole week.
Why These Four Recipes?
Back to school is the season where kids need three things from their food that most snacks don’t deliver:
• Sustained energy — not a sugar spike followed by a 2pm crash in the middle of math class
• Brain support — nutrients that actually feed cognitive function, focus, and mood regulation
• Gut health — because 70% of the immune system lives in the gut, and September is also cold season
Every recipe here delivers all three. Made with ingredients you can pronounce, free from the top 11 allergens, and built for real life — where you have ten minutes on Sunday night and need five days of lunchboxes sorted.
Recipe 1 — Superfood Banana Sushi Rolls
No cooking. No equipment. Five minutes. The cross-section reveal when you slice it is the moment that makes everyone stop scrolling.
This is the lunchbox item that makes other parents stop at school pickup and ask what you packed. The ‘sushi’ framing makes kids want it immediately, the banana and seed butter combination is genuinely satisfying, and the superfoods built into every slice are completely invisible. Maca powder stirred into the seed butter. Hemp hearts and chia seeds pressed into the inside so they appear in every single round.
Ingredients (makes 12–16 pieces — serves 2–3)
• 2 large whole grain or coconut flour tortillas
• 4 tbsp sunflower seed butter
• 1 tsp maca powder, stirred into the seed butter
• 1 tsp raw honey or maple syrup
• 2 ripe bananas, peeled
• 2 tbsp hemp hearts
• 1 tbsp chia seeds
• Optional coating: 2 tbsp crushed Rawcology Chocolate Granola or unsweetened coconut flakes
• Optional drizzle: melted dark chocolate or extra honey
Instructions
1. Mix sunflower seed butter with maca powder and honey in a small bowl until smooth.
2. Lay tortilla flat. Spread maca seed butter mixture evenly across the entire surface to the edges.
3. Sprinkle hemp hearts and chia seeds evenly across the seed butter. Press lightly with the back of a spoon so they embed into every slice.
4. Place one whole banana along the bottom edge. Roll tightly away from you, keeping the banana centred. Press the seam to seal.
5. Optional: roll the outside in crushed Rawcology clusters or coconut flakes for a crunchy coating.
6. Slice into 1-inch rounds with a sharp knife using one clean motion — not sawing. The cross-section showing hemp hearts and chia throughout is the shot.
7. Serve immediately or refrigerate unsliced up to 4 hours. Slice fresh just before serving.
|
MAKE-AHEAD + LUNCHBOX TIPS Make ahead: Assemble rolls unsliced up to 4 hours in advance and refrigerate Slice tip: Slice just before packing — keeps the cross-section clean and banana fresh Lunchbox: Pack in a small sealed container with a toothpick through each piece Batch tip: Make 4 rolls at once — two per kid, two days sorted in one session |
|
WHY THIS IS AMAZING FOR YOUR FAMILY • Maca root (in the seed butter base) is a Peruvian adaptogen that supports sustained energy, adrenal function, and focus — the back-to-school brain ingredient your kids don’t know they’re eating. • Hemp hearts are a complete protein — all 9 essential amino acids in two tablespoons, plus more omega-3 fatty acids than most fish servings. Embedded invisibly in every single slice. • Chia seeds hold up to 10 times their weight in water, supporting hydration through a full school day. Also deliver 5g of fibre per tablespoon. • Sunflower seed butter provides healthy monounsaturated fats and vitamin E. Completely nut-free and school-safe. • Banana provides natural potassium for muscle function and resistant starch that feeds beneficial gut bacteria. • Allergen-free: no peanuts, tree nuts, gluten, or dairy. Safe for every kid at the lunch table. |
|
APPROXIMATE NUTRITION PER SERVING Per 4 pieces (approx. ¼ of one roll): 180 cal • 9g fat • 21g carbs • 4g fibre • 6g protein • Natural sugars only from banana and honey. |
Recipe 2 — No-Bake Pink Beet Bites
The snack that’s secretly a vegetable. No oven, no browning, no surprises — just the most vivid naturally pink snack bite your kids have ever seen. The colour you see is exactly what real beet root looks like when nothing destroys it.
Here’s something most people don’t know about beet root: the pigment that makes it so extraordinarily pink — betalain — is heat sensitive. The second it goes in an oven it starts to fade and brown. Which means the best way to show off beet root’s colour is to never bake it at all.
These no-bake bites are fudgy, naturally sweet, vivid pink, and genuinely delicious. Your kids will think they’re getting a treat. They are getting beets, hemp hearts, and a full serving of fibre and plant protein. That’s the back-to-school hack.
Ingredients (makes 18–20 bites)
• 1 cup gluten-free rolled oats, blended into flour
• ½ cup fresh beet, boiled and pureed until completely smooth — OR ¼ cup pure beet root powder (single ingredient, no blends)
• ½ cup sunflower seed butter
• 2 tbsp maple syrup or raw honey
• 1 tsp pure vanilla extract
• 1 tsp lemon juice
• Pinch of pink Himalayan salt
• 2 tbsp hemp hearts (stir in after blending)
• 2 tbsp dark chocolate chips or cacao nibs
Instructions
8. Blend rolled oats in a blender for 20–30 seconds until a rough flour forms.
9. Add beet puree or beet root powder, sunflower seed butter, maple syrup, vanilla, lemon juice, and salt directly to the blender. Blend until a thick, smooth dough forms — about 30 seconds. The dough will be vivid pink. This is the moment.
10. If the dough is too wet, add a little more oat flour one tablespoon at a time. If too dry, add a tiny splash of water or a little more seed butter.
11. Pour into a bowl. Stir in hemp hearts and chocolate chips by hand — do not blend these.
12. Roll into 1-inch balls between your palms, or press into a parchment-lined pan and refrigerate then slice into squares.
13. Refrigerate 30 minutes or freeze 15 minutes until firm.
14. Store in the fridge. The pink colour deepens and intensifies overnight — day 2 bites are more vividly pink than day 1.
The colour note — important
|
Beet root pigment (betalain) is heat sensitive — baking destroys it and turns it brown. No-bake is intentional and is what keeps the colour vivid. For best results use pure single-ingredient beet root powder with nothing else added, or fresh beet that has been roasted in foil rather than boiled (roasting concentrates the pigment; boiling leaches it into the water). If using fresh boiled beet puree, the colour will be softer pink rather than vivid magenta — still beautiful, just more subtle. Add a tiny pinch of pure beet root powder on top of the puree if you want to intensify the colour without baking. |
|
MAKE-AHEAD + LUNCHBOX TIPS Make ahead: Up to 5 days in the fridge in an airtight container Storage: Fridge 5 days / freezer 3 months individually wrapped Colour tip: The pink deepens overnight in the fridge — make them the night before for the most vivid colour Lunchbox tip: Pack 2–3 per container. Add a note that says ‘there’s a vegetable in here’ — kids love a mystery Freeze tip: Make a double batch and freeze — pull out the night before for a perfect lunchbox snack every morning |
|
WHY THIS IS AMAZING FOR YOUR FAMILY • Beet root is one of the richest sources of dietary nitrates, which the body converts to nitric oxide — supporting blood flow, brain oxygenation, and sustained cognitive focus. Exactly what kids need for a full school day. • Betalains — the compounds that make beet root pink — are powerful antioxidants with anti-inflammatory properties that support immune function and cellular health. The colour is the nutrition. • Hemp hearts add all 9 essential amino acids and omega-3 fatty acids in every bite — complete protein stirred in invisibly. • Oat flour provides complex carbohydrates and beta-glucan, a soluble fibre that supports healthy blood sugar and keeps energy steady through the school day. • Lemon juice isn’t just flavour — the acidity protects the beet pigment and helps your body absorb the plant-based iron from hemp hearts more effectively. • No refined sugar, no dairy, no gluten, no allergens, no oven. The snack the school lunchbox rules were made for. |
|
APPROXIMATE NUTRITION PER SERVING Per 2 bites: 130 cal • 7g fat • 15g carbs • 2.5g fibre • 4g protein • Sweetened only with maple syrup and the natural sweetness of beet root. |
Recipe 3 — Loaded Apple Nacho Board
The snack that looks like something from a restaurant menu and contains more protein and fibre than most granola bars. Four minutes. One board. Everyone at the table reaches for it.
Apple nachos have been all over social media for a while — but most versions are just apple slices with peanut butter and chocolate chips. This version is loaded. Pumpkin seeds for magnesium and zinc. Hemp hearts for complete protein. Chia seeds for fibre and hydration. Cacao nibs for antioxidants. And a cinnamon dusting that is not just flavour — it’s a natural blood sugar stabiliser.
Mix red and green apple varieties for maximum colour contrast and photograph it from directly above before anyone touches it. It is one of the most beautiful things you will ever put on your kitchen table.
Ingredients (serves 4–6)
• 3–4 large apples (mix of red and green), cored and thinly sliced
• 3 tbsp sunflower seed butter, thinned with 1 tsp maple syrup and 1 tsp warm water
• 2 tbsp hemp hearts
• 1 tbsp chia seeds
• 2 tbsp pumpkin seeds (pepitas)
• 1 tbsp cacao nibs or mini dark chocolate chips
• ½ tsp cinnamon
• Pinch of pink Himalayan salt
• Optional: 1 tbsp Rawcology Apple Cinnamon Gut to Go Snack Bites scattered across the top
• Optional: drizzle of raw honey or maple syrup to finish
Instructions
15. Core and thinly slice apples — aim for ¼-inch slices. Mix red and green varieties for colour contrast.
16. Fan apple slices across a large board in overlapping layers like nacho chips. Leave no gaps — the fuller the board the better the visual.
17. Whisk sunflower seed butter, maple syrup, and warm water until smooth and pourable. Drizzle across the apples in generous thin lines — this is the ‘nacho cheese’ moment.
18. Scatter hemp hearts, chia seeds, pumpkin seeds, and cacao nibs evenly across the board.
19. Dust with cinnamon and a small pinch of pink salt.
20. Optional: scatter Rawcology Berry Burst clusters for probiotic crunch and colour.
21. Optional: final drizzle of raw honey for a glossy finish. Photograph immediately, then serve.
|
MAKE-AHEAD + LUNCHBOX TIPS Make ahead: Slice apples up to 2 hours ahead — toss in lemon juice and store submerged in cold lemon water in the fridge Day of: Drain, pat completely dry, fan on the board, add toppings — 3 minutes Lunchbox version: Apple slices in one container, seed butter in a dip cup, toppings in a small bag. Assemble at school Batch tip: Slice apples for the whole week Sunday, store in lemon water in the fridge, drain and pat dry daily |
|
WHY THIS IS AMAZING FOR YOUR FAMILY • Pumpkin seeds are one of the richest plant sources of magnesium — essential for muscle function, nerve health, energy, and sleep. Also rich in zinc for immune function and iron for energy. Most school-age kids are chronically low in magnesium. • Hemp hearts add complete protein (all 9 amino acids) and omega-3 fatty acids scattered invisibly across the board. • Chia seeds contribute 5g of fibre per tablespoon and hold up to 10 times their weight in water, supporting hydration through a full school day. • Cacao nibs contain more antioxidants than blueberries and natural compounds that support mood and focus — the chocolate hit without refined sugar. • Apples provide quercetin (anti-inflammatory flavonoid) and pectin, a prebiotic fibre that feeds beneficial gut bacteria. • Cinnamon is a natural blood sugar stabiliser, slowing the release of natural sugars in the apple so energy stays steady rather than spiking. • Rawcology Berry Burst Granola Snack Bites add GanedenBC30 probiotic cultures — gut support scattered right across the board. |
|
APPROXIMATE NUTRITION PER SERVING Per serving (approx. ¼ of board): 195 cal • 11g fat • 22g carbs • 5g fibre • 6g protein • All natural sugars from apple and a small drizzle of honey. |
Recipe 4 — Superfood Watermelon Pizza
The most visually extraordinary thing on the table. Pink watermelon base, whipped cottage cheese ‘sauce’, an emerald spirulina swirl, bee pollen ‘glitter’, and a rainbow of fruit. The pizza your pediatrician would actually approve.
This is the recipe that generated more messages after the CHCH segment than anything I’ve ever made on television. The colours, the superfoods, the pizza framing — it works on every level. Make it once. Photograph it from above. Post it. Watch what happens.
Ingredients (serves 4–6)
• 1 large round watermelon slice, approximately 1-inch thick, cut from the centre of the melon
• Whipped cottage cheese ‘sauce’:
• 1 cup full-fat cottage cheese
• 1 tsp pure vanilla extract
• 1 tsp raw honey or maple syrup
• Spirulina swirl:
• ¼ cup of the whipped cottage cheese (reserved before spreading)
• ½ tsp spirulina powder
• Toppings:
• Fresh strawberries, halved
• Fresh blueberries
• Kiwi slices
• 2 tbsp hemp hearts
• 1 tsp bee pollen
• Optional: fresh mint leaves, edible flowers
Instructions
22. Cut a 1-inch thick round slice from the centre of a large watermelon. Pat completely dry with paper towels — twice. Removing moisture is what keeps toppings from sliding.
23. Blend cottage cheese with vanilla and honey until completely smooth and creamy — about 60 seconds. It should look like thick whipped cream.
24. Set aside ¼ cup of the whipped base. Stir spirulina powder into the reserved portion until vivid emerald green.
25. Spread the white whipped cottage cheese base across the watermelon, leaving a 1cm bare edge around the outside like a real pizza crust.
26. Drop small spoonfuls of the green spirulina mixture across the white base. Use the back of a spoon or a toothpick to swirl it in. The emerald-on-white swirl is the visual moment.
27. Arrange fruit toppings across the pizza. Mix colours deliberately for maximum impact.
28. Scatter hemp hearts across the fruit — they look exactly like sesame seeds on a real pizza.
29. Finish with bee pollen scattered across everything. Slice like a real pizza and serve immediately.
The three superfoods explained
|
Whipped cottage cheese: Full-fat cottage cheese blended smooth delivers 14g of protein per half cup, is low in sugar, and has a luxurious texture completely unrecognizable from the container. High protein, no refined sugar, and currently the most viral high-protein food trend for good reason.
Spirulina: A blue-green algae and one of the most nutrient-dense foods available. Complete protein with all 9 amino acids. Significant iron, B12, and chlorophyll. Half a teaspoon stirred into cottage cheese turns it emerald green and delivers meaningful nutrition invisibly — to kids who would never eat it any other way.
Bee pollen: Contains all 22 amino acids, B vitamins, natural enzymes, and flavonoids with anti-inflammatory properties. One of nature’s most complete whole foods — and it looks like gold glitter scattered across the pizza. Use it. |
|
MAKE-AHEAD + LUNCHBOX TIPS Make ahead: Whip the cottage cheese base and spirulina swirl up to 24 hours ahead — store separately in sealed jars in the fridge Day of: Cut and dry the watermelon, assemble and top just before serving — 5 minutes total Important: Watermelon releases moisture quickly at room temperature — serve immediately after assembly Lunchbox version: Build a mini version in a small round container — layer cottage cheese, spirulina swirl, fruit, hemp hearts, and bee pollen. Seal and refrigerate overnight |
|
WHY THIS IS AMAZING FOR YOUR FAMILY • Whipped cottage cheese delivers 14g of protein per half cup — making this genuinely high-protein. The blending transforms the texture entirely. • Spirulina contains complete protein (all 9 amino acids), iron, B12, and phycocyanin — one of the most studied anti-inflammatory compounds in natural food. Half a teaspoon delivers real nutrition invisibly. • Bee pollen contains all 22 amino acids, B vitamins, natural enzymes, and plant flavonoids. A small amount goes a very long way nutritionally. • Hemp hearts add complete protein and omega-3 fatty acids in every tablespoon, hiding as ‘sesame seeds’ across the pizza. • Watermelon provides lycopene — an antioxidant that protects cells from UV damage. Perfect for kids heading back indoors after a summer of sun. • The rainbow of fruit delivers vitamin C, anthocyanins, quercetin, and a full spectrum of antioxidants — each colour is a different phytonutrient family. |
|
APPROXIMATE NUTRITION PER SERVING Per slice (approx. ⅛ of pizza): 120 cal • 4g fat • 12g carbs • 2g fibre • 9g protein • No refined sugar. The 9g protein per slice from whipped cottage cheese is the surprise. |
The Sunday Prep Plan — All Four in 45 Minutes

Frequently Asked Questions
Where do I find spirulina, bee pollen, and beet root powder?
All three are available at Whole Foods, Healthy Planet, most Loblaws health sections, and Bulk Barn. Also widely available online. Look for pure single-ingredient versions — no blends, no added flavours. A small jar of each goes a very long way.
Why no-bake for the beet bites?
Beet root pigment (betalain) is heat sensitive and fades to brown in the oven. No-bake is intentional — it’s what keeps the colour vivid. The bites are fudgy, delicious, and hold together perfectly without any baking at all.
Can I make these if my child has food allergies?
Yes — all four recipes are free from the top 11 allergens. Rawcology products are made in a dedicated allergen-free facility. Always check individual ingredient labels for your specific needs.
How long do these recipes keep?
Banana sushi rolls: refrigerate unsliced up to 4 hours, slice fresh before serving. No-bake beet bites: fridge 5 days, freezer 3 months. Apple nachos: assemble day-of, sliced apples keep 5 days in lemon water. Watermelon pizza: serve immediately after assembling.
Can kids help make these?
All four are genuinely kid-friendly. The beet bites (rolling) and apple nacho board (scattering toppings) are the easiest starting points. The banana sushi roll is great for older kids. The watermelon pizza topping arrangement works for any age.
