Cantaloupe Fig and Green Bean Salad

 Ingredients
  • Handful arugula
  • 1/2 ripe cantaloupe scooped into balls
  • 6 figs quartered
  • Handful green beans trimmed and steamed
  • 1/4 cup salted pistachios chopped
  • 1/2 cup vegan goat cheese 
  • 2-3 tbsp Rawcology Peach Granola
  • Pinch flaky sea salt
Champagne Vinaigrette
  • 1 clove garlic minced
  • 1 tsp dijon mustard
  • 1 tsp spicy honey
  • 2 tbsp champagne vinegar
  • 3-4 tbsp evoo
  • Sea salt
Method
  1. Bring a small pot of water to a boil. Add a pinch of salt.  Trim string beans and add to boiling water.  Boil for 3 minutes, strain and add to an ice bath.
  2. Prepare vinaigrette by adding dressing ingredients to a small jar.  Cover tightly with a lid and shake vigorously. 
  3. Arrange salad ingredients on a platter and top with 3 -4 tsp of vinaigrette.  Sprinkle it with flaky sea salt and serve immediately!
