Chocolate Watermelon Pizza

The perfect summer snack does exist. These chocolate covered watermelon slices are sweet, simple, and refreshing, making it the perfect snack to beat the heat. 

Did you know that watermelon is 92% water! This makes it a delicious way to rehydrate.

As the hot weather peaks, it is important to stay cool and hydrated. Every cell, tissue, and organ in your body needs water to work properly. A lack of water can lead to dehydration which can drain your energy levels making you tired.  Staying hydrated is important for regulating body temperature, lubricating joints, improving mood and brain function, and helping to fight infections.

 

Ingredients
  • 1/2 cup chocolate chips
  • 1 tsp coconut oil
  • 1/4 cup cashews chopped
  • 2 tbsp pumpkin seeds roughly chopped
  • 1 tbsp coconut
  • 6 big slices watermelon
  • 1/2 cup Rawcology Raw Chocolate Granola
Method
Measure out chocolate chips and coconut oil in a glass jar. Melt on high in 30 increments until fully melted. 
Place a piece of parchment paper down onto a baking sheet.  
With watermelon on the parchment, smear chocolate.  
Scatter granola, nuts, seeds and coconut over watermelon and place in the fridge to set.
