Easy Meal Prep: Overnight Oats

Overnight oats are so versatile and packed with nutrients, making them the perfect healthy breakfast to make ahead and take on the go. They are so easy to throw together that breakfast practically makes itself while you sleep. 

Oatmeal is rich in fiber, which promotes fullness, eases the insulin response, and benefits gut health. It's also a source of vitamins B and E, and minerals such as magnesium.

Blueberry Almond Banana Overnight Oats

Ingredients
Base Layer (one serving) 
  • 1/3 cup Gluten Free Oats
  • 2 tbsp Chia Seeds
  • 1/2 cup almond milk
  • 1/2 tsp almond extract
  • 1 tsp cinnamon
  • 1 tsp maple syrup
Middle Layer 
  • 1/4 cup blueberries
Top Layer 
  • 1/4 cup coconut yogurt

Method
  1. Prepare the overnight oats the night before. In a glass or measuring cup mix oats, chia seeds, almond milk, maple syrup, almond extract, cinnamon and salt.  Stir to combine.  Cover and place in the fridge overnight. 
  2. When ready to assemble, remove oats from fridge and give them a stir.  Top with a layer of blueberries and yogurt.

Base: Buckwheat, Oats, or Quinoa. (Yes, even quinoa).
  
The base is what fuels your body for the day ahead. Fiber is so important when it comes to health, yet most people don’t get enough of this super-nutrient. Liquid: You can make overnight oats with your favourite kind of dairy-free milk, our favourites are coconut-milk, almond milk, cashew milk, and oat milk.
  
Yogurt: We love to use coconut yogurt as it gives the oats a creamy texture and adds gut loving probiotics. 
  
Sweenters: We love to stick with natural sweetness that make our bodies feel good. Honey, Maple syrup, and Coconut Sugar are some great options.   
    
Add-ins: This is what truly makes the oats delicious. Have some fun by incorporating fresh fruit, nut butters, seeds, spices, extracts, and super nutrients (such as maca root or cacao) to  give your overnight oats an ultimate super-boost.
