Mint Chocolate Energy Bites
Need an afternoon pick-me-up? These delicious no bake mint energy bites are packed with all the brain loving benefits and energy boosting fats thanks to the tahini and Rawcology.
Fats are an important macronutrient responsible for providing energy, supporting cell function, boosting brain power, and regulating hormones. Fats can also act as a nutrient booster by helping enhance the absorption of fat-soluble vitamins A, D, E, and K.
- 1 cup Rawcology Mint Granola plus more for garnish
- 1 cup dates pit removed soaked in hot water if dates are hard
- 1/4 cup cacao powder
- 1/2 cup tahini
- 1/4 cup maple syrup
- 1/2 cup dessicated coconut
- 1/4 tsp salt
- 90 grams dark chocolate melted
- 1 tsp coconut oil

Place 1 cup mint granola in a food processor and pulse until it resembles coarse sand.

Remove pits from dates and add to the food processor with cocoa powder, coconut, tahini, maple syrup and salt.

Turn the machine on and process until the dough comes together. Roll dough into 1n inch balls and place on a parchment lined baking sheet.

Place balls in the fridge or freezer while you melt chocolate.

Chop chocolate into small pieces and add a tsp of coconut oil. Melt in 30 second increments in the microwave until fully melted (should take 1 minute total).

Dip balls into chocolate and place back on the parchment.

Sprinkle balls with Mint Granola and a sprinkle of sea salt. Place in the freezer to set. Enjoy!
