Peach Ice Cream and Pancakes
Peach season will be here before you know it. We’re kicking off the season early with these fluffy, gluten-free, plant-based pancakes with juicy peaches in each bite. Served with a creamy dairy-free peach ice cream, making it the perfect recipe for a peach lover's dream.
Peaches are a sweet stone fruit that holds many nutritious benefits. Rich in antioxidants and anti-inflammatory compounds, high dietary fiber which helps to regulate digestion, and boosting with all the vitamins and minerals for glowing skin.
- 4 cups frozen peaches
- 1/2 tsp vanilla
- 1 cup coconut milk
- 2 tbsp maple syrup
- 2 tbsp peach granola
- 1 cup soy milk
- 1 tsp lemon juice
- 1 tbsp protein powder
- 1 tbsp ground flax
- 1 tbsp coconut sugar
- 1/2 tsp vanilla
- 1 1/2 cup gf flour blend
- 1 tbsp baking powder
- Pinch salt
- I cup peach slices
- 1/4 cup Rawcology Peach Granola
- Place frozen peaches, vanilla, coconut milk, maple syrup into a food processor and blend until smooth and creamy.
- Scrape down sides as needed and be patient! Scrape into a container fitted with a lid.
- Sprinkle Rawcology Peach Grain Free Granola on top and place in the freezer until firm. Once ready to eat, remove from the freezer for 20-30 minutes to soften to make it easier to scoop.
- Place milk, lemon juice, flax, protein powder and vanilla in a large glass measuring cup and whisk well to combine.
- In a separate bowl whisk dry ingredients. Add wet to dry to form a batter. Heat a skillet and make pancakes.
- Serve with homemade peach nice cream, fresh peach slices and Rawcology Peach Grain Free Granola.
