Pear Crumble

Starting off the week with a baked recipe that's a delicious dessert OR a nourishing breakfast. Sweet, spiced pears topped with a buttery crumble and a date caramel will leave you wanting seconds of this plant-based pear crumble.

Ingredients
  • 1 cup Rawcology Apple Cinnamon Oat Cluster 
  • 1 cup oats
  • 1/2 cup sorghum flour (any flour will do)
  • 1 tsp cinnamon
  • 1/4 cup coconut sugar
  • 1/2 cup vegan butter or coconut oil melted
  • 1/2 tsp salt
  • 6 cups diced pears
  • 1 tbsp lime juice
Date Caramel
  • 1 cup dates soaked in hot water 20 minutes
  • 1/2 cup full fat coconut milk
  • 1 heaping tbsp tahini
  • 1/2 cup maple syrup
  • 1/2 tsp vanilla
  • 1/4 tsp salt
Method
  1. Grease a 8x8 baking dish.  Preheat oven to 375d.  
  2. Pulse Oat Clusters through a food processor until it resembles chunky sand.  Place in a bowl with oats, flour, cinnamon, sugar, salt, butter and salt.  Mix together. 
  3. Wash and dice pears with skin on.  Toss pears into baking dish with squeezed lime and toss to combine.
  4. Spread topping over pears and place into the oven. Bake for 40-45 minutes until bubbly and golden brown. Remove from oven and allow to cool slightly before serving.  Serve with yogurt, Ice cream or date caramel
