Persimmon Chia Pudding

The perfect Grab & Go breakfast. 

Sweet persimmons and spiced ginger all layered in a vegan chia pudding. Rich in phytochemicals and anti-inflammatory properties, this delicious breakfast will have you feeling your best. Persimmons are full of nutrients and sweet flavor. They are an excellent source of vitamin A, vitamin C, potassium, magnesium, calcium, and fiber. Persimmons are also high in antioxidants which helps to fight oxidative stress caused by free radicals.

     
Ingredients
  • 1/2 cup chia seeds
  • 2 cups non dairy milk
  • 1 tsp maple syrup
  • 1 tsp vanilla
  • 1/4 tsp ground ginger
  • 1 ripe persimmon thinly sliced
  • 1/2 cup Rawcology Chocolate Granola 
Method
  1. Add chia seeds and milk to a large glass measuring cup.  Whisk to combine.
  2. Add in maple syrup, vanilla and ground ginger and whisk again.  
  3. Place in the fridge to set for a minimum 2 hours, preferably overnight.
  4. When you are ready to assemble the parfait, slice persimmon thinly. Place inside a jar or glass pressing the slice firmly to the glass. Each jar will take approximately 3 slices of persimmon.  
  5. Scoop chia pudding into jars. Top with Chocolate Granola, and a sprig of mint.
