Plant Protein Radicchio Cups
Try these fresh and delicious Plant Protein Radicchio Cups with chickpea “mock tuna”, beet hummus and tahini dressing for dinner tonight!
Chickpea is a great plant-based protein and this is a fresh and delicious way to enjoy them.
This is a 3 part recipe, including:
- “Mock Tuna”
- Beet Hummus
- Tahini Dressing
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes
Ingredients
“Mock Tuna”- 1 can chickpeas, drained and rinsed
- ½ cup cucumber, chopped
- 1 stalk celery, sliced
- 2 dill pickles, sliced
- ¼ cup vegan mayo
- 2 green onions, sliced
- 1 tsp dried dill
- Salt and pepper to taste
- Hot sauce (optional)
- 1 small roasted beet
- Juice of ½ lemon
- 2 tbsp tahini
- 1 can drained rinsed chickpeas
- 2 cloves garlic, smashed
- ¼ cup extra virgin olive oil
- Water to thin
- Salt and pepper to taste
- Tahini Dressing Ingredients:
- Juice from ½ a lemon
- 1 garlic clove, minced
- ⅓ cup tahini
- 1 tbsp maple syrup
- Salt and pepper
- Water to thin
- Avocado
- Mico greens
- Rawcology Smoky Cheeze Superfood Coconut Chips
Method
- Place ingredients in a food processor for the "mock tuna" and pulse to combine.
- Process until desired consistency.
- We kept ours a little chunky. Add more mayo if too dry.
- Place all of the ingredients in a food processor for the beet hummus and blend.
- Add water to thin out.
- Drizzle with olive oil to finish.
- Place all of the tahini dressing ingredients into a bowl and stir to combine.
- Add warm water until you reach desired consistency.
- Assemble, layer beet hummus, mock-tuna into radicchio cups.
- Optional to add sliced avocado and micro greens.
- Drizzle with tahini dressing and a sprinkle of our Smoky Cheeze Coconut Chips for some crunch. Enjoy!
