Pumpkin Cheesecake 

Velvety pumpkin cheesecake with a nutritious twist. Our Pumpkin Cheesecake is made from creamy cashews, fragrant pumpkin spice, and a hint of maple syrup for added sweetness.  Topped with vegan whipped cream and a sprinkle of Rawcology Apple Cinnamon Snack Bites for all the fall vibes.

  • 1 cup cashews soaked overnight
  • 1/4 cup cashew milk
  • 1/4 cup canned pumpkin
  • 1 tbsp lemon juice
  • 1/2 tsp pumpkin spice
  • 1 tsp vanilla
  • 2 tbsp maple syrup
  • Pinch salt
  1. Add the cheesecake ingredients into a high-speed blender and blend until smooth and creamy. 
  2. Roughly chop snack bites on cutting board and divide equally into each cup.  Top with pumpkin cheesecake filling, followed by vegan whipped cream and a sprinkle of granola on top.  Place in the fridge for 1 hour before serving.
