Strawberry Banana Bread

- 2 flax eggs
- 1/2 cup apple sauce
- 1/2 cup olive oil
- 1/2 cup sugar
- 3 medium sized bananas mashed
- 1 tsp vanilla
- 1 cup strawberries chopped
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1 1/2cup gluten free flour blend
- 1 cup almond flour
- 1 1/4 cup oats
- 1/4 tsp xanthan gum (omit if your flour already has it)
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup icing sugar
- 2 tbsp strawberry powder
- 1-2 tbsp non-dairy milk
- Handful crushed Rawcology Strawberry Granola

Preheat oven to 350d. Line a standard loaf tin with parchment paper.

Prepare flax eggs by whisking 2 tbsp ground flax into 5 tbsp warm water. Set aside to gel for several minutes. In the meantime, vigorously whisk together mashed banana, apple sauce, olive oil and sugar and vanilla together.

In a separate bowl whisk together dry ingredients. Add dry to wet and fold together until no floury parts remain. Add chopped strawberries.

Transfer batter into the prepared pan. Smooth out the top with a spatula and then tap firmly on counter to release any air bubbles.

Place in the oven to bake for 55-60 minutes or until a toothpick comes out clean with a few combs on it. Allow it to cool in the tin for 10 minutes before removing. Place on a cooling rack to cool completely before icing.

In a medium sized bowl add icing sugar and strawberry powder. Add 1 tbsp of milk at a time until you reach a drizzle consistency.

Pour over the cooled loaf. Sprinkle crushed granola on top of fresh glaze. Slice and serve.
