Purple Sweet Potato Nice Cream
Keeping those women's empowerment feelings going, we made Purple Sweet Potato Nice Cream to continue the celebrations!
We love using our granola and coconut chips as sprinkles for nice cream desserts. They add a great crunch as well as an excellent nutrient boost. Not to mention this particular recipe with the sweet potato addition creates a high fiber, potassium rich, antioxidant treat.
- 3 frozen bananas
- ½ cup sweet potato purée
- 1 scoop vanilla protein powder
- ½ cup dairy free milk
- Rawcology Blueberry Granola and Matcha Latte Coconut Chips to top
- Place everything in a high speed blender and blend until smooth.
- Transfer into a container with a lid. Place in freezer for 2 hours.
- When ready to eat, remove from freezer and scoop into balls. Serve with crushed Rawcology Blueberry Granola and Matcha Latte Coconut Chips. Enjoy!
