Strawberry Energy Balls

These Strawberry Energy Balls are the perfect energizing snack to have on hand. They come together in just a few minutes and will become a household favorite snack that even your kids will love. - 2 cups cashews raw is best
- 6-8 medjool dates pit removed
- 1/2 cup unsweetened desiccated coconut (more for coating)
- 1/2 cup Rawcology Strawberry Grain Free Granola grounded
- 1/3 cup peanut butter or cashew butter
- 3 tbsp maple syrup
- 2 tbsp hemp seed
- 1 tsp vanilla
- 1/4 tsp salt
- 1/3 cup freeze dried strawberry powder (more for coating)
- 1-2 tbsp water (if needed)
To a food processor add cashews and granola. Pulse to break down into a sand like texture.
Add dates, coconut, peanut butter, maple syrup, hemp seeds, vanilla and salt. process until a dough is formed. If mixture appears to dry, add 1 tbsp of water, pulse again.
Roll into ping pong sized balls.
Add coconut and freeze dried strawberry powder into 2 separate bowls. Drop balls into one or the other rolling them around to coat. Alternate until no dough remains.
Place on a parchment lined plate and place in the freezer. You can eat them at any time but they are best stored in the freezer.
