Sweet Potato Recipe Smoothie Parfait Banana Granola Plant Based Vegan Gluten Free

Mid week treat, Sweet Potato Smoothie Parfait 
This is a great plant based, gluten free mid afternoon balanced snack, a post dinner treat or a delicious breakfast with star ingredient maca root. 
 
Maca root is a powerful adaptogen that helps the body adapt to stress. It is known to help balance hormones and provide a boost for your mood and energy.
We love having snacks that are balanced with healthy fats, protein, fibre, vegetables and functional superfoods. This recipe would also make a great post fitness recovery meal. Find all the goodness in the recipe below!

 

Ingredients
  • 1/2 cup plant based milk
  • 1 inch piece raw ginger
  • 1 cup sweet potato, steamed and cubed
  • 2 frozen banana chunks
  • 1 tbsp maca
  • 1 scoop protein powder
  • 1/2 tsp cinnamon
  • 1 cup ice
  • Coconut yogurt
  • Rawcology Banana Grain Free Granola
  • Sliced banana

Method
  1. Add milk, sweet potato, ginger, maca, banana, protein powder, cinnamon and ice into a blender. Blend until smooth and creamy tampering if needed.
  2. Build your parfait! Start with Banana Granola, add sweet potato smoothie, yogurt, smoothie and top with more granola and sliced banana. Enjoy!
