Apple Cake
When it's winter time we want to have all the treats on hand to enjoy when we come in from a snow filled trek outdoors. So let's have some dense and delicious plant based Apple Cake!
This gluten free, plant powered recipe has all the warming spices and is the perfect pairing for a post snow outing hot bevy.
Wet Ingredients
- 2 flax eggs
- 1/2 cup cashew milk or plant based milk of choice
- 1 tbsp apple cider vinegar
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1/4 cup coconut sugar
- 1 tsp vanilla
- 1/2 cup apple sauce
- 3/4 cup apple, small dice
- 1 apple, sliced
- 1/4 cup chopped walnuts
Dry Ingredients
- 1 cup gluten free flour
- 1/2 cup buckwheat four
- 1/2 cup almond flour
- 1/4 cup Apple Oat Clusters, crumbled
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp salt
Method
- Preheat the oven to 375F. Spray an 8x8 pan or put place parchment paper down.
- Make two flax eggs. In a large bowl mix all wet ingredients together except for diced apple. In a separate bowl, whisk together dry ingredients. Add wet to dry and mix. Add in diced apple and fold in until well combined.
- Spread batter into pan and scatter 1/2 cup crumbled Apple Oat Clusters on top. Place in the oven and bake for 40 minutes or until a toothpick comes out clean.
- Finish with icing sugar or icing sugar substitute if you desire!
