Eat More Oats
Oats are a gluten-free whole grain and a great source of important vitamins, fiber, antioxidants, and essential minerals including manganese, phosphorus, magnesium, iron, zinc, and folate. Oats dietary fiber is high in beta-glucan, which helps to lower cholesterol by binding bile acids and excreting them from the body. The high fibre content also slows digestion and allows for a slow and steady release of glucose into the blood, ultimately regulating blood sugar. Consuming high fibre foods leaves you more satisfied and keeps you full longer. At the end of the day, oats are among the healthiest foods you can eat and considered a superfood.

Ingredients (Serves 2)
  • 1 cup gluten free rolled oats
  • 2 tbsp chia seeds
  • 1/2 tsp cinnamon
  • Pinch pink salt
  • 1/2 cup dairy-free yogurt + 1/4 cup for assembling 
  • 1 cup dairy free milk of choice
  • 1 tsp pure vanilla
  • 1/4 cup blueberry chia jam, divided
  • 1/4 cup Rawcology Blueberry Grain Free Granola 
    1. Prepare the overnight oats the night before. In a large glass or measuring cup mix oats, chia seeds, cinnamon and salt.  Pour in milk, 1/2 cup yogurt and vanilla and stir to combine.  Cover and place in the fridge overnight. 
    2. When ready to assemble, remove oats from fridge and give them a stir.  Arrange two jars with 1 tbsp each blueberry jam in the bottom.  Top with some more oats, then yogurt, then jam and continue layering until everything is gone. 
    3. Top with Rawcology Blueberry Granola.  Enjoy!
