Chocolate Raspberry Smores
Getting ready for summer weekends with these Raspberry Chocolate Smores!
Whether you're campfire bound for the upcoming long weekends and summer holidays or bakin' these in the oven and taking them to the park, trust us, it's a good idea...WHEREVER they are eaten!
Raspberry + Chocolate + Marshmallows = HEAVEN
Ingredients
Crust
- 1 cup almond flour
- 1/2 cup rolled oats
- 1 cup graham wafer crumbs
- 1/2 cup Rawcology Chocolate Granola
- 2 tbsp maple syrup
- 1/2 cup melted coconut oil
- Pinch salt
Raspberry Chia Jam
- 2 cups frozen raspberries
- 2 tbsp maple syrup
- 3 tbsp chia seeds
- Squeeze of lemon juice (optional)
Vegan Ganache
- 1 can coconut milk
- 1 1/2 cup chopped dark chocolate
- Handful of fresh raspberries
- 8-10 vegan marshmallows sliced in half
Method.
- Crust: Place crust ingredients into a food processor. Blend until dough comes together. The dough should hold together when pinched. Place parchment in an 8x8 square pan.
- Preheat oven to 350F. Bake for 15-20 minutes. Set aside to cool to room temperature.
- Vegan Ganache: In a small pan, heat milk and chocolate together over medium low heat. Stir together until completely melted and smooth. Remove from heat and allow to cool slightly. Pour over raspberry jam and crust. Scatter raspberries over ganache. Place in refrigerator to set overnight.
- Then make your chia jam! In a small pan, add raspberries. Cook until berries are soft, add syrup, chia and lemon juice. Set aside to cool. Once cool, smear a layer of jam on top of crust.
- Turn oven onto broil (or use a handheld cooking torch). Place marshmallows on top of ganache. Slide into oven under broiler for 1 minute. They will burn very fast so don’t wander away!
- Once marshmallows are browned, slice into bars, sprinkle with more granola and raspberries. Enjoy!
