This month we are eating and cooking with the best of what this seasonโ€™s produce has to offer with Blueberries, Watermelon, Peaches, Artichokes, Eggplant, and Lettuce. ๐Ÿ‰๐Ÿ‘๐Ÿ†๐Ÿฅฌ

Weโ€™re holding onto each outdoor meal and sunfilled lunch with extra gratitude in this glorious summer month of fresh food!

๐Ÿ’™ Blueberries are believed to have the highest antioxidant levels among all fruits and veggies and help with inflammation and cognitive function. We are gobbling them up on our smoothie bowls, in our gluten free pancakes, on top of nice cream and enjoying them straight up!

๐Ÿ‰ Watermelon is an extra delicious hydrator in the summer and has lycopene and vitamin C, making it a nutritious and hydrating treat. We love a simple slice on a hot afternoon, mixed into a summer salad with arugula and cucumber or made into superfood popsicles with blueberries.

๐Ÿ‘ Peaches are a great source of fibre to support digestion and gut health. We are obsessed with peaches this time of year adding them to our muffins, smoothies, making galettes or mixed into a savoury salad with toasted nuts and vegan cheese.

๐Ÿ’š Artichokes contain inulin, a type of fibre that acts as a prebiotic, which is essential for a healthy gut microbiome. We love making a hearty artichoke spinach dip for the whole family to enjoy.

๐Ÿ† Eggplants are an excellent source of essential nutrients and fibre and add a hearty addition to any BBQ meal. We like them grilled and drizzled with olive oil and sea salt.

๐Ÿฅฌ Lettuce can be perceived as a filler vegetable; however, they really are anything but! Despite the low calorie content, lettuce contains many essential nutrients, such as vitamin C, K, A, calcium, folate, and potassium. We love these as a base for ANY salad, but also sneak them into our morning shakes for an extra green boost. ๐Ÿ’ซ
