Matcha Scones

Matcha lovers, this one’s for you!  

These matcha scones will be your newest baking addiction. They are bursting with green tea flavor and perfectly balanced with a sweet white chocolate glaze. Vegan, gluten-free, and perfect for an energizing dessert.

You can sprinkle them over yogurt, use them as a topping for smoothie bowls, or simply enjoy them as an energizing snack.

  • 2 cups gluten free 1:1 flour
  • 1/2 cup Rawcology Matcha Granola ground
  • 1 1/2 tbsp matcha
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 tbsp sugar
  • 85 grams cold vegan butter chopped into small pieces
  • 3/4 cup soy milk (plus more for top)
  • 2 tbsp ground flax +5 tbsp warm water
  • Vegan white chocolate for drizzle (optional)
  1. In a large mixing bowl whisk together flour, ground granola, matcha, baking powder and soda, salt and sugar.
  2. Add butter to the flour mixture.  Using your hands to work butter into flour until texture resembles coarse sand.
  3. Create a well in the middle of the dough and add milk and flax egg.
  4. Use a fork to mix and then use your hands to shape into a consistent dough.  Wrap the dough in plastic wrap and shape the dough into an imperfect 1 inch circle. Place in the freezer for 30 minutes to chill.   
  5. Preheat the oven to 400 degrees.
  6. Remove dough from the freezer and place on parchment paper. Cut the dough into 5 equal (ish) sized triangles.  Place it on a cookie sheet.  Brush the tops with tbsp soy milk.  Bake for 20 minutes or until golden brown. 
  7. Drizzle with white chocolate and sprinkle with Rawcology Matcha Granola.
