Neapolitan Chia Seed Parfait
The nostalgic taste of Neapolitan Ice Cream meets nourishing breakfast parfait. Made with creamy coconut milk and omega-3 packed chia seeds, this Neapolitan Chia Parfait will have you swooning over its beautiful layers of vanilla, strawberry, and chocolate.
Chia seeds boast a powerhouse of nutrients like fiber, protein, omega-3 fatty acids, and antioxidants, making this recipe an excellent addition to your diet.
- 2 cups soy milk
- 1/2 cup chia seeds
- 1 tsp vanilla
- 1 tsp maple syrup
- 1/4 cup cocoa powder
- Pinch salt
- 2 cups frozen strawberries
- 6 tbsp soy milk
- 2 tbsp chia seeds
- Coconut cream or Vegan yogurt
The day before assembling, prepare the chia pudding. Add all the pudding ingredients into a container fitted with a lid. Whisk to thoroughly combine and place in the fridge overnight.
Add strawberries, chia seeds and milk to a high speed blender. Blend until smooth and creamy, scraping down sides as needed.
To assemble, add a layer of Rawcology Chocolate Granola in the bottom of the jars. Top with chia pudding. Add another layer of granola followed by a layer of strawberry chia mousse. Add another layer of granola and top with coconut whip or yogurt. Dust Top with cacao powder and serve immediately.
