Sometimes we just want something simple that can be thrown together in under 10 minutes, but is still delicious and nourishing. These are the moments where salads are our best friend. Salads often get a bad rep as being bland and boring, but dress it up right and you’ll surprise yourself, and others, as to how filling and tasty a salad can be.
The start to any great salad is choosing the right base. Chickpeas are one of our favourites, as they are high in protein, iron, magnesium, copper and zinc.
However, the star of any salad is always the dressing and this tahini dressing takes the cake. It is rich in protein, fiber, healthy fats, copper, magnesium and iron thanks to the sesame seeds. The secret is to massage it into the kale really well to take away the kale’s toughness and slight bitter taste. Combined with the chickpeas, this salad is bound to leave you satisfied.
