Purple Kale and Chickpea Tahini Salad

Sometimes we just want something simple that can be thrown together in under 10 minutes, but is still delicious and nourishing. These are the moments where salads are our best friend. Salads often get a bad rep as being bland and boring, but dress it up right and you’ll surprise yourself, and others, as to how filling and tasty a salad can be.

The start to any great salad is choosing the right base. Kale is always a winner because it is one of the most nutrient dense vegetables containing carotenes, vitamins C and B6, manganese, fiber and calcium. Next comes the toppings. Chickpeas are one of our favourites, as they are high in protein, iron, magnesium, copper and zinc.

However, the star of any salad is always the dressing and this tahini dressing takes the cake. It is rich in protein, fiber, healthy fats, copper, magnesium and iron thanks to the sesame seeds. The secret is to massage it into the kale really well to take away the kale’s toughness and slight bitter taste. Combined with the chickpeas, this salad is bound to leave you satisfied.

  1. 1 bunch purple kale or lacinato/Tuscan kale
  2. 1 1/2 cups chickpeas or 1 can chickpeas
  3. 2 green onions
  4. Tahini dressing (recipe follows)
  5. Rockin’ Ranch Superfood Coconut Chips
Tahini dressing
  1. 4 tbsp tahini
  2. 4 tbsp water
  3. Juice from half a lemon
  4. 1 tsp apple cider vinegar
  5. 1 tsp maple syrup
  6. ¼ tsp pink Himalayan salt
To make the dressing
  1. Combine all ingredients in a bowl and whisk until smooth and creamy.
To assemble salad
  1. De-stem kale. Chop kale and green onions. Rinse the chickpeas and place in a large bowl with the kale and green onions.
  2. Add the tahini dressing and massage into salad until well combined and the kale is softened. Top with Rockin’ Ranch Superfood Coconut Chips.
